LAUKI KOFTA CURRY

INGREDIENT

For kofta-

Squash - 1 medium
gram flour - 5 tea spoon
salt to taste
chilly powder - 1/2 tea spoon
asafoetida - little bit

For curry-

Onion - 1 large(grated)
Ginger and garlic paste - 2 tea spoon
Tomato - 1 large(pure)
curd - 1/2 bowl
coriander powder - 2 tea spoon
turmeric powder - 1/2 tea spoon
red chilli powder - 1 tea spoon
salt to taste
cumin seeds - 1 tea spoon
cilantro - for garnish

METHOD

  1. To make kofta first wash, peel and grate squash, then mix gram flour, salt and chilli powder in it and mix well.
  2. Put deep vassal on gas with oil, when it become hot make round kofta of squash and leave that in oil, when it turns brown take that out from oil on paper towel.
  3. Now to make curry for kofta take one kadai and put 2-3 tea spoon oil and mix cumin seed in that.
  4. Add grated onion and ginger garlic paste in that and saute that, when onion turns brown add tomato paste, salt, coriander powder, red chilli powder and curd in that and mix it.
  5. leave it for 5 min on medium flame.
  6. If it is too thick then add 1/2 cup water and again leave it for 5 min.
  7. before serving put all koftas in that curry, mix them and garnish with cilantro.

PITOR - AN AUTHENTIC U.P. DISH


BESAN - 6 TEA SPOON
CURD- ½ CUP
SALT
RED CHILLI - ½ tea spoon
CORIANDER POWDER - ½ tea spoon
TURMERIC - 1/3 tea spoon
HING- little bit
TAMATO - 1
ONION- 1
GARLIC PASTE - ½ TEA SPOON
CORIANDER LEAVES- for garnish

METHOD
  1. In a bowl mix besan, curd, salt, red chilli powder and little bit turmeric powder.
    Put some water and mix it(it should be as thick as pakori ghol)

  2. put one vassal on gas, take 1 table spoon oil and heat it, after that put besan mix in that vassal and mix it continuesly on high flame, besan will become thick then take off vassal from the gas.

  3. Take one plate, grees it with oil and put the thick besan and spread it from ur fingers.
    now take one knife and cut besan in cubes like paneer.

  4. Now take some oil in kadai and deep fry the besan cubes till brown

FOR GRAVY


  1. Take 2tea spoon oil in kadai, when it become hot put some jeera, then cut onion in small piceses and put that in kadai with garlic paste, sauté it when it become brown then add tamato paste, mix salt, red chilli, coriander powder, turmeric powder and curd.

  2. Mix ½ cup of water and mix it, when it starts boiling mix besan cubes in that and let it cood for another 5min on medium flame.

  3. Now garnish it with coriander leaves.

MAKING TIME 20 MIN
SERVING 2 PEOPLE


NOTE: you can make it as a dry vegitable also, all u have to do is after adding tamato paste in onion and garlic paste don’t add water instead of that mix besan cubes directly and mix it.

Hello World,
Ya, I think that should be the very first post of this blog, "Cooking Island".
As you would have obviously guessed, it is a Food blog. Cooking Island will have posts with some great recipes, tips and tricks to make the food better and last longer. I will start with some Indian dishes and then later on we will see where this blog goes.
Definitely, as a reader you will be driving Cooking Island into a direction where you want it to. For that what you can do is drop a comment on any post for what you want to see or if you have any suggestion to the existing post or if you have altogether a different recipe or something which you want to appear on this blog. I will be really happy to answer your questions to the best of my knowledge.
